I came home from an hour gym class at GoodLife. The first 1/2 hour is ‘The Grit – Strength’ class. this is an amazing class. It builds your strength, cardio and muscles and of course endurance. I sweat so much in this 1/2 hour class compared to any other class at the gym.
I also did another 1/2 hour of Body Pump class afterward. Then I showered and walked home. On the way home, I was so hungry but I felt like having something healthy like salad. So I dropped by Metro to get the ingredients for Caprese Salad.
It was amazingly delicious and so easy to make. It doesn’t take long to make either.
I normally wash all my fruits and vegetables with mix of 1/3 white vinegar and 2/3 water. I sprayed the grape tomatoes and basil with the mix of white vinegar and left there for a few seconds before i rinsed it off.
Then I start preparing and making the Caprese Salad. Please see below for the quick and easy recipe.

- 2/3 pint grape tomatoes I used 2/3 of a pint for my salad
- 1/2 box mini bocconcini enough for your salad. depends on how hungry you are
- 1 avocado
- 2 sprigs basil leaves chopped, no stem
- 1 tbsp olive oil use good olive oil
- balsamic reduction drizzle enough
- a pinch salt and pepper to taste

- cut the grape tomatoes in 1/2
- cut the mini bocconcini in 1/2
- 1/2 the avocado, remove the seed and dice the avocado. my way of dicing avocado: make vertical line and horizontal line and use a spoon to scoop it.
- chop basil leaves and throw out stem
- Drizzle Good Olive Oil
- Drizzle Balsamic Reduction
- Add salt and pepper to taste as avocado and mini bocconcini have no taste.
- Mix the salad with the dressing and serve.
