  1. Pre-heat oven to 450 degrees F.
  2. Put a good amount of vegetable shorting in each section of pudding pan.
  3. Put in oven for about 5 minutes- not so long that oil is smoking, ( It's best to place trays on bottom of oven to catch oil spills) but long enough that It sizzles when batter is dropped in.
  4. This next step is crucial, you should do it quickly to make sure that oil stays hot, and you should not under-fill the pans. Pour batter in molds, the batter may come close to overflowing.
  5. Reduce oven heat to 425 degrees F.
  6. Bake for about 15 minutes, until yorks start to brown around the edges.
  7. Remove from cups immediately, draining any oil inside.
