  1. Heat broiler
  2. Spread prosciutto slices on cookie sheet. Cook until crisp, 2-3 minutes; cut into pieces. Alternative way is to put prosciutto on 2 pieces of paper towel on a microwavable plate and microwave for a couple minutes until crisp.
  3. DRESSING: In a small bowl, whisk olive oil, lemon juice and honey. Season with salt and pepper.
  4. In a large bowl, combine spinach and mushrooms. Toss with desired amount of dressing. Sprinkle with chopped prosciutto.
