Bring a large pot of water to the boil and add the pasta (your choice of Spaghettini, penne or linguini). Cook for 8 minutes until Al dente.
Drain the pasta.
Meanwhile, in a large sauce pan, fry the mushrooms until all the liquid from the mushrooms have evaporated and the mushrooms have started to brown (+- 5-7 minutes).
Chop the basil leaves
Add the garlic and fry for another minute. Remove mushroom from the pan.
Clean the pan.
Cut the Pancetta into square pieces.
Add a little butter or olive oil to pan. Add 1/2 of sliced white onion and caramelized until brown, add in Pancetta and fry until crispy.
In a Sauce Pan, add a little butter, add the rest of the sliced white onion, fry a little. Then add the mushroom back into the pan, add the fried Pancetta, add the cream and lemon juice and season to taste.
toss in the pasta and mix through the sauce. Add more cream if necessary depending on how you like the pasta.
Add in the rest of the basil leaves.
Add crushed chilli (optional)
