If you are like me who really love pasta, this is the easy pasta recipe for you yet it tastes delicious. If you are vegetarian, then you can make this pasta dish without Pancetta.  The first time I made this pasta dish with Spaghettini.  I made this dish with Penne on Christmas day for my family and everyone loves it and complimented what a delicious dish of pasta.  You can also use Linguini if you’d like.

As per Wikipedia, Pancetta is Italian bacon made of pork belly meat that is salt cured and spiced with black pepper and sometimes other spices.



I got the recipe from Simply Delicious and tweaked it a little.

Spaghettini with Garlic, Mushrooms and Pancetta
Instructions
  1. Bring a large pot of water to the boil and add the pasta (your choice of Spaghettini, penne or linguini). Cook for 8 minutes until Al dente.
  2. Drain the pasta.
  3. Meanwhile, in a large sauce pan, fry the mushrooms until all the liquid from the mushrooms have evaporated and the mushrooms have started to brown (+- 5-7 minutes).
  4. Chop the basil leaves
  5. Add the garlic and fry for another minute. Remove mushroom from the pan.
  6. Clean the pan.
  7. Cut the Pancetta into square pieces.
  8. Add a little butter or olive oil to pan. Add 1/2 of sliced white onion and caramelized until brown, add in Pancetta and fry until crispy.
  9. In a Sauce Pan, add a little butter, add the rest of the sliced white onion, fry a little. Then add the mushroom back into the pan, add the fried Pancetta, add the cream and lemon juice and season to taste.
  10. toss in the pasta and mix through the sauce. Add more cream if necessary depending on how you like the pasta.
  11. Add in the rest of the basil leaves.
  12. Add crushed chilli (optional)

I was very amazed of this easy pasta recipe. It tasted just like the pasta I have in restaurant yet so easy to make.
