Ingredients

Vegetable Oil
enough to coat the pan

of salmon

Instructions
Wash the salmon and remove bones if there are any. (Image with salmon from Costco)
Dry the salmon fillet with a piece of paper towel. Leave the salmon in room temperature for 15 minutes or 1/2 hour.
Place Skin side down on the Lodge Cast Iron Pan to pan sear until the skin is crispy.
Add Salt and Pepper (more than usual)
Flip the salmon over and pan sear the good side until nicely colored. Make sure to not over-cook it.
Add Salt and Pepper on this side after the salmon was flipped over.
Remove the salmon from the pan and put on a tray and cook in the oven for 10-15 minutes at 320F
Serve with Mango Salsa from Costco and some mixed green salad.
Recipe Notes
Make sure to put the salmon on a parchment paper when put in the oven. Otherwise it will stick to the tray.
