Ingredients for Fricasseed Chicken
Marinade for the Chicken:
Prepare and Marinade the Chicken
  1. Wash the Chicken with cold water and lemon juice. Then Rinse
  2. Cut the chicken breasts into 3 pieces each.
  3. Marinade the chicken with 1 teaspoon of Salt/Pepper
  4. Add in 1 teaspoon of Garlic Powder
  5. Add in 2 teaspoons of Dark Soy Sauce and Mix well
  6. Add in 1 Tablespoon of Zesty Italian Dressing and Mix well.
  7. Marinade the chicken in the refrigerator overnight.
Prepare the Vegetables
  1. Julienne 2 White Onions. Scotch Bonnet is optional but highly recommend.
  2. Cut in half a handful of Grape Tomatoes.
How to Make Fricasseed Chicken
  1. Add Canola Oil to a pot on high heat. Then add in the chicken.
  2. Brown the chicken until golden but not fully cooked inside.
  3. Turn the chicken over to brown the other side.
  4. Then set the chicken aside.
  5. Add Canola Oil into the same pot that you brown the chicken in.
  6. Add in Onions, 3 Sprigs of Thyme and 1 tablespoon of Pimentos.
  7. Add in Red Pepper, Orange Peppers and the Carrots.
  8. Add in 1/2-1 Scotch Bonnet (Optional)
  9. Sautee for a few minute until the white onion is soft.
  10. Add in Tomatoes.
  11. Stir and cook until soft.
  12. Add in 1 Cup of Chicken Stock.
  13. Add the Chicken back in the pot.
  14. Simmer for 10-25 minutes until chicken is fully cooked.
  15. Mix 2 Teaspoons of Cornstarch in 3 scoops of the sauce to make the gravy and mix well until the cornstarch is fully dissolved.
  16. Add in the Cornstarch Mix and stir well.
  17. Let it simmer at medium heat for 10 minutes
  18. Ready to Serve with Jasmine white rice! ENJOY!
