This Crispy Chewy Cowboy Cookies recipe is Super Simple to make! The Cookies turned out to be Crispy on the outside; Chewy and Moist on the inside. Easy, Healthy and So Yummy!
I would like to share this Cripsy and Chewy Cowboy Cookies with you so you can start baking for the Holiday Seasons. This makes a great Holiday Gift for your Families or Friends. All you need is a beautiful tin can to package these cookies.
To be honest, it seems like no one knows why the cookies are called ‘Cowboy Cookies”. There is speculation that “it’s hardy enough to survive long days out west, while others claim the recipe was developed in Texas where cowboys are apparently prolific.” (source Huff Post)
If you are not planning to bake for the Holidays, I assure you that you will enjoy this Crispy Chewy Cowboy Cookies for anytime during the day/night. I love having these cookies with a cup of coffee during the day! 😋
For mid-night snack to satisify your sweet tooth, I would recommend to have these cookies with a cup of milk.
The chewiness of the cookies is from the hearty Oats in addition to the multiple textures when you take a bite: the flakiness of Coconut (we used unsweetend coconut in this recipe), the chocolatey flavor from chocolate chips, the nutty flavor from the lightly toasted pecans

RECIPE INGREDIENTS
All you need in this recipe is 12 simple, healthy ingredients and the steps to make them are very easy and only take half to an hour depending on how many cookies you are making.
- All Purpose Flour
- Baking Powder
- Baking Soda
- Salt
- Brown Sugar
- Butter (melted)
- Eggs
- Vanilla
- Oats
- Coconut Unsweetened
- Pecans (toasted)
- Semi Sweet Chocolate Chip
HOW TO MAKE CRISPY CHEWY COWBOY COOKIES:
Start by pre-heating your oven to 350F.

Then toast Pecans lightly and melt Butter, set aside.

Then, in a large mixing bowl, combine the Dry Ingredients together: Flour, Baking Powder, Baking Soda, Salt, mix and set aside.

Meanwhile, in another large mixing bowl, combine the Wet Ingredients together: Brown Sugar, Butter, Eggs, and Vanilla.




Then Add the Dry to the Wet and mix completely.



Add Oats, Coconut, Pecans and Chocolate chips. And Mix until fully combined.



Finally, line the baking sheet with Parchment Paper and scoop the cookie dough on. And put in the oven to bake at 350F. See below for bake time depending on the cookie size.
You can make 2 different sizes and the baking time varies based on the size of the cookies:
Option#1: 1/4 Cup Size (The bigger the cookie, the more chewy it can be!)
i. Firstly, Scoop out ¼ Cup size and flatten a little.
ii. Secondly, Bake for 15 – 17 min turning the tray halfway.
iii. Finally, Let sit on the tray for 5 min for residual baking and to set.



Option#2: Teaspoon Size (If you want bite size. A little less chewy in the middle but still yummy!)
i. Firstly, Scoop Teaspoon size and flatten a little.
ii. Secondly, Bake for 13 min turning the tray halfway.
iii Lastly, Let sit on the tray for 5 min for residual baking and to set.


TIPS:
- Depending on your oven, if you want the cookies not to burn, then put a baking sheet at bottom rack.
- The Bigger the Cookies (1/4 Cup Size), the more Chewy the Cookies are.
- The Smaller the Cookies (Teaspoon Size), the Cookies are less chewy in the middle but still delicious!
- Remeber to line the baking sheet with parchment paper.

- Preheat oven to 350*F
- Toast pecans and melt butter, set aside
- Combine Dry Ingredients; Flour, Baking Powder, Baking Soda, Salt, mix and set aside.
- Combine Wet Ingredients; Brown Sugar, Butter, Eggs, and Vanilla.
- Add Dry Ingredients to Wet Ingredients and mix completely.
- Add Oats, Coconut, Pecans and Chocolate Chips.
- Mix until fully combined
- Scoop out ¼ cup or teaspoon size and flatten a little
- First Batch: Bake for 15 – 17 min turning halfway for ¼ cup size
- 2nd and 3rd Batch: Bake each batch for 13 min turning halfway for teaspoon size
- Let sit on the tray for 5 min for residual baking and to set.
- Transfer to a cooling rack.

I’ve never heard of cowboy cookies (I’m from the UK and they’re not a thing here) but these look great! I can’t wait to try them out!
I guess it is more North American type of cookies. lol They are quite delicious! We have made the cookies many times during the holidays.
